BBQ Bacon Mac and Cheese is a grown up version of that comfort food you know and love from your childhood. Not only is it is easy to make, but its absolutely tasty to eat! You just can’t go wrong with adding heaping amount of bacon to your mac and cheese! Here’s the 411 on how you can make this great appetiser or side dish to your BBQ party.

The macaroni

Add 1 tablespoon salt to the water and stir to prevent the noodles from sticking, then drain.

The bacon

Cook your bacon in a large skillet until crisp. Remove those juicy babies with a slotted spoon and drain on a paper towel. Remember not to drain the bacon grease as you’ll need it at the next step!

The roux

Add 2 tablespoons butter the the hot bacon grease and stir until melted. Thereafter, add in the 6 tablespoons flour and cook over medium heat for 5-6 minutes or until the flour starts to brown. Finish making the cheese sauce by adding in the milk and heavy whipping cream to the roux, and return to a boil. Turn off the heat and stir in the salt, cracked black pepper, and red pepper flakes. Reserve 1/2 a cup of each of the jack and cheddar cheeses and set aside with the mozzarella. Stir the rest of the jack and cheddar cheese into the sauce, and whisk until the cheese is melted.

Putting everything together

After draining the cooked noodles, return them to the large pot. Pour the cheese sauce over the noodles and stir in half of the cooked bacon. Here, you want to make use of the remaining 2 tablespoons of butter to coat the sides and bottom of your cast iron skillet before pouring your mac and cheese from the large pot in. Top with the remaining jack, cheddar, and mozzarella cheese and sprinkle on the remaining bacon crumbles.

Light up your BBQ grill

Preheat your BBQ grill to approximately 200 degree celcius before boiling your macaroni in large pot. Place the bacon mac and cheese on the grill for 20 minutes or until the sides are bubbling and the cheese is melted and starting to brown. Remove your perfect mac & cheese from the BBQ grill and serve them to your BBQ party guests immediately!
